When cooking vegetables, some of the nitrates and nitrites decompose, and some go into the broth. A lot of toxins, including carcinogens, are formed in overcooked oil. Therefore, you should not fry in oil again, and the pan should be thoroughly washed each time. It is very good to use Teflon-coated frying pans: you can fry on them with a minimum amount of oil or without any oil at all.
